Summer Food

We’re at the height of summer food enjoyment this weekend.   For two of these I can thank Susie – she pointed them out over on her blog.

The first one I made this week- Stained Glass Jell-o.

It was marvelous and easy.  Try it here.

Then last night I tried another of Susie’s suggestions : Slow Roasted Tomatoes.  Or, as Maddie and I prefer to call them, Slomatoes.

Holy.  Good. Lord.

They were so incredible I died.  The End.

I put them over some penne with fresh pesto and it was heavenly.  I wouldn’t be surprised if Paul went out and bought some tomatoes in bulk for this.  I didn’t get any pictures because I needed to eat them.  Maybe next time!

Next up, deviled eggs.

I like to mix my hard – boiled yolks with fresh mayonnaise (yes, I make my own mayo), a little bit of dijon mustard, some poultry seasoning, a splash of sugar, a splash of salt, and a generous bit of dried dill.  Emily likes it when I sprinkle the finished eggs with a little paprika.  Then you can serve these with some lovely pan – fried chicken.

I mostly followed the recipe in the Pioneer Woman Cookbook, but instead of frying them in oil, I fried them in melted butter-flavored crisco in a cast iron skillet before the whole oven finishing. Divine!!!!! Completely fat – free and fiber – full and healthy!!!!

Not.

Oh well.

And since we”re on the subject of totally healthy, you can finish off your meal with my easy Ambrosia Salad.

I can’t guarantee you’ll win any gourmet cooking contests with this, but the kids love it.

Just mix up some canned or fresh crushed pineapple, some mandarin oranges, maraschino cherries, sweetened flake coconut, mini marshmallows, cubed apples, and vanilla Greek yogurt.  The quantities all depend on your preferences.

Now if you’ll excuse me I have to go figure out why my butt’s gotten so big.

Scenes From A Holiday Weekend, Part 1

We literally took 1500 pictures this weekend.  It took me quite a long time to go through them all, and then it was tough to pare down to what was getting posted here.  There still ended up being too many for one post, so I’m breaking it into two.  I’ve also been felled by some sort of stomach bug so it’s been slow going today.

We had plenty of family around and with the pool finally complete there was no excuse to not have fun.  There were watermelon margaritas (incredible!), grilled foods of all kinds, raw clams and Tres Leches cake.  The best part is that the kids have been outside all day and they fall asleep easily at night.  All that sun and fun tends to wear you out!

This is also the first summer since we’ve lived in this house (about 5 years now) that we’ve actually been able to make good use of the deck.  It’s always been so hot we don’t want to be anywhere near the outside world.  This year, however, it doesn’t seem too bad out there (this would be thanks to the pool) , and we happily have been dining al fresco every evening and sitting around the fire pit late into the night.

Quilts and Pies, Oh My!

Ok, here’s a random, jumbled post for you.

I made a cherry pie last night with two jars of morello cherries I got from Trader Joe’s a few weeks ago.  It was spectacular, if I do say so myself, and there is a very good reason for that:  I tried a new crust.

For years I have only used the pie crust recipe handed down for generations in my husband’s family.  And I was very happy with it.  But then I saw the latest post over at Smitten Kitchen and thought that her crust just looked……irresistible.

So I tried it.  And good lord, it is the best crust I have tasted in my entire life, I kid you not.  I urge you all to try it immediately!

Other than pie – making I have been doing woefully little because of the massive heat wave we have been experiencing.  The animals are unhappy, I am unhappy….it’s just beastly out there.  Fortunately I have plenty of shade for them and I hooked up a misting attachment so they can get some moisture on them to cool off.  Tomorrow is supposed to be about 100, so wish us luck with that.

Mostly I have been sitting in the A/C working on handquilting.

I started this….two years ago?  Anyway it’s easy and doesn’t require much effort, which is good because seriously I just need a hammock to hang out in and take lots of long, summer afternoon naps.  That’s all I want do do right now.

A Happy and Full Solstice

The girls and I celebrated the summer solstice by trekking out to a nearby mountaintop to pick peaches in the insanely hot sun. How else do you celebrate the first official day of summer than with summer’s quintessential fruit?  I tell you that was the fastest 30 lbs of fruit we’ve ever picked.  We just wanted to get back into some A/C!!!

Even after much snacking, we were left with this:

So we made these:

Grilled peaches with fresh basil to top some grilled chicken.

Pocket – sized peach pies.

And peach cobbler.  There are still pleeeenty of peaches left.

After dinner al fresco we made a fire to roast marshmallows and play word games.

I hope the longest day of the year found you all enjoying the sun with your loved ones.

Blueberry Gateau

Happy Fathers Day everyone!

To celebrate, how about Paul’s  favorite summer treat – a delectable blueberry cake!  I have been making this for so many summers now that I cannot remember where I got the recipe.  So, with apologies to whomever may have originally created this, I’ll now share how it’s done.

First you’ll need to rinse about 2  1/2 cups of fresh blueberries.  I’ve not tried frozen in this, but my gut says it would turn out too liquidy.  I’ve also not tried this with any other type of berry, but I bet it would be incredible with fresh cherries, raspberries or blackberries.

Next you’ll want to preheat your oven to 350 and then butter and flour a 10 inch (give or take) springform pan.  Set aside.

In a medium bowl combine the following:

1 cup of flour

1 tsp. baking powder

1/8 tsp. salt.

Set that aside, and in a larger bowl beat together:

1/2  cup of softened butter (1 stick)

1 cup of sugar

Beat these until all soft and fluffy.  Then you’ll need to add 2 eggs, one at a time, beating well after each.  Then throw that flour mixture in and mix it all up.   Spread it evenly over the bottom of your prepared pan.

Now grab your blueberries in yet another large bowl  and add a splash of lemon juice, 1 TBS. of flour and 1 TBS. of sugar and mix it all up.

Toss them on top of the batter you just put in the pan and spread evenly, patting the blueberries gently and only slightly into the batter. Like so:

You don’t want them necessarily in the batter, but you want them to not be rolling around on the surface either.

Now bake the whole mess for one hour.

Now stand back and let your family and friends marvel at the new culinary heights you’ve achieved!

And ask me why I have not yet planted a blueberry bush.  Seriously?  Why have I not?  I do not know.  Blueberries are not too cheap here.  I need to get on that right away.

Bacon – Wrapped Dates of Deliciousness

The other night at book club my friend Diana made these.  They were devoured in 2.4 seconds.  Okay, I exaggerate.  But not by much!  She explained how easy they were to make and I had to try it myself.  All you need are dried, pitted dates and bacon.  Wrap the dates with the bacon, stick them in the oven at 350 and bake for 30 – 40 minutes depending on desired amount of bacon crispness.

It’s the perfect balance of salty and sweet.  Plus, it’s bacon.  Paul agreed we could probably wrap his shoe in bacon and it would be delicious.

Emily left today for a camping trip with the Girl Scouts.  She’s going to have a blast, and I am thinking about teaching Neve how to crochet while she’s gone.  I’ll have to find Oona a fun project as well.  Maybe she can learn how to do laundry.

Little Green Balls!

Finally, more than two months after sowing the little seeds indoors, one of my tomato plants has finally sprouted some little green balls!

Looks like they’ll be ready around the same time as the basil I planted out front.  Tomato-Bail pesto, here we come!!!!

Mostly the gardens out front are in serious need of weeding, re-planting and re-organizing.  I’ve been working on it as the weather allows, but it’s either been dangerous – stormy (tornado watches already!) or killer hot and humid.  The kind of killer hot and humid  that makes me want to commit complete and total herbicide and forget the whole blasted thing.  And people wonder why central air is so important to me.

The bee balm is growing in nicely, though.

Anyway, back to the pesto.  It’s my favorite summer food.  I put it on everything I can.  Including the muffuletta I made last night.

With homemade boule.

Stuffed with ham, salami, provolone and marinated artichoke hearts.  So yummy.

Even Mabel seemed to know something yummy was going on in the kitchen.

I really think she wants to be a house chicken.  She likes to hop the gate and hang out on the back porch.  It drives Pippa nuts.

But it gives Emily an opportunity for chicken snuggles.

Personally, I prefer furrier creatures for snuggling.

Scenes From a Short Vacation

Maddie, Emily and I went on a short little jaunt up north this week.  I’ve been itching to get back “home” for awhile and thought the older girls would have fun seeing a bit of where our family used to live.  It was a lovely break from the usual and it went way too fast.

We stayed at a hotel in Saratoga Springs right downtown.  It was perfect.  The best part of the whole trip?  Getting to see my dear friend Shireen.

We went to high school together, and we live waaaay too far away from each other now.  Otherwise I can guarantee you we’d be inseparable.

We had really wanted to go on the Minne Ha Ha but they are apparently still only running it on the weekends.  That was a pretty big let down, but we still enjoyed the lake and the fort.

I miss getting to see this on a regular basis.  I also miss how wonderfully not – humid it was there the whole time, even right before a big rain.

Can you smell the balsam?  I am not kidding.  Standing there the air was thick with its scent.  This is along the west side of Lake George, just north of Bolton Landing.

Elephant rock!!!!  Also on the west side of Lake George, outside the town of Hague.

On the way to Ticonderoga.  We were going to tour that fort as well but it was late in the afternoon by the time we got there so we opted not to.

However we DID opt to pack quite a bit of goodies to bring home with us.  If you’re ever in Saratoga you must check out Mrs. London’s.  It is a European pastry shop with to die for food.

I won’t even tell you how much I spent there.  Let’s just say it wasn’t cheap.  But so very worth it!  The attention to detail in these lovelies must be seen to be believed.

It was tough leaving my animals and my little girls.  Neve told me on the phone every night that she wanted to be with me.  I just didn’t think she would enjoy the 12 hours in the car or the historic tours or the sightseeing.  I brought her back an Invader Zim tee shirt and that seems to have made it all better, just as the pastries bought me at least 6 months worth of gratefulness from my husband!

I’ve also been playing with Picnik – it’s a photo-shop style website for improving and playing with your pictures.  Bear with me as I get used to it and its features!

Crazy Party Weekend

I haven’t had a weekend this packed with events in a while.  Usually we’re only busy with chores, but this time there was acutual fun to be had.  We have several birthdays to thank for this.

First, my friend Amy’s kids all had birthdays this month and so they threw a wild Mexican- themed fiesta Saturday night to celebrate all 3.

Hello, food table.  I loved you.  I swear Amy could’ve fed an army.  Which is just as well, since about that many people were there!


Love this dog.  I’ve never seen a more well – behaved, CALM lab, ever.  Think they’d trade for Pippa????

Somehow, with three kids and a full – time job she still has the energy to plan and organize a huge bash like this complete with games for the kids.

While the oldest gets a face full of cake.  At least it matches her skirt!

My girls had a blast, I got to hang out with some great friends and stuff myself with all kinds of good food and then I got to go home and plan for today: Neve’s 7th birthday.

That’s right!  My middle terror turned 7.

So sad.  Seems like just yestereday she was a toddler trying to steal mama’s “crappucino”.

Yes, she asked for the Cyndi Lauper Barbie doll.  This both amuses me and makes me feel very old.

She’s had quite an eventful 7 years, and she’s got the scars to prove it.

This world does NOT know what it is in for.

If they can learn how to share, this little one just might help her older sister take over the Universe some day.

Along with their butthead llama who is easily bribed with food.

PS – mom and I got Jerry half shaved today.  Who knew electric shears could make such a difference??!!  We’ll get his other half when he’s calmed down a bit from having the first half done.

The Fattening

The pie/cake fairy came again.  I hate that witch.  She is determined to thicken my waistline.

Forget about losing those last ten pounds! she says.

Besides it’s fifteen now anyway.  Ha!

She knows I hate working out.  She knows I have zero will power.  So tonight she brought me this:

Strawberry Shortcake – Cake from The Pioneer Woman.

My favorite part of the recipe is where she says, “Bake for about 45 – 50 minutes or until no longer jiggly like my bottom”.

That’s when you know it’s going to be goooood.
